2 ounces Pineapple Juice (sweetened)
2 ounces Rum (or non-alcohol Rum alternative)
1 teaspoon freshly grated ginger
Candied ginger (optional)
Shake together Pineapple juice, Rum, fresh ginger, and ice. Using a cocktail strainer, pour chilled mixture into a glass, filling it about about half way. Top off the glass with Prosecco and a bit of candied (or grated) ginger. Serve immediately.
