The wine is made with the revolutionary Vinooxygen® method, patented by the Elegir family, which allows Borgo Moncalvo to carry out all the vinification without the need to decant the wine. This system allows an absolute control of the oxygen levelin wines, eliminating the aromatic quality losses, due to unwanted oxidation and allowing a reduction of sulfites up to 70% of the legal limit, without compromising its durability over time.
