Tasting Note: The nose is gentle yet defiant, and opens with the aroma of pink peppercorns and herby notes. You will feel as though you are walking through a herb garden on an early summer evening, when the herbs are fragrant and aromatic. There are notes of lavender and thyme, mingled with deep blueberry and plum flavors, as well as light iodine. It is youthful but not without character, focusing on elegance and spice. Dark chocolate and warm spices bring in the finish.

Food Pairing: Dark can be paired with barbecued meat, especially beef and lamb with plenty of herbs and spices. Slow-cooked stews are a match made in heaven for our Dark, as they bring out the rich, plummy notes of the varietal. Poultry, such as roast chicken or pan-roasted duck, are ideal for a meal pairing and grilled vegetables make for a tasty side-dish.
About the Winery: Paserene is a boutique winery in Franschhoek, owned by Martin Smith and Ndabe Mareda, that produces high-end, luxury wines. With a strong emphasis on “sense of place and people”, we take great care to ensure all the wines we produce, the artwork on the labels, and the tasting experience is truly authentic and guarantee a lasting legacy. The name Paserene comes from the Latin word Passeriformes, the order of “travelling and free” birds containing swifts and swallows.
