    TASTING NOTE: The nose is bright and fresh, with notes of green fig and green apple, not your expected asparagus and gooseberry aromas. The true difference is on the palate with a tropical explosion.

    The Emerald is an Elgin and Franschhoek wine with confidence and a powerful flavor. The nose also has a whiff of nettles, blackcurrant leaves, green pepper, and ground white pepper.

    You will find juicy Cantaloupe (spanspek) flavor, intermingled with delectably ripe mango, passionfruit, and pineapple. It has a rounded, luxurious mouthfeel and a long, lingering finish.

    This delicious Sauvignon Blanc would pair well with a fresh Caprese salad, drizzled in home-made basil pesto to really bring out the green notes of the wine. A light tomato-based pasta dish is another perfect partner for the Emerald – especially perfect for a summer evening dinner.

    The flavors of a baked goats cheese drizzled with honey complement this wine nicely, and adding a green salad with a citrusy dressing to the mix will enhance it even more. A Charcuterie board can make for the perfect wine tasting meal with the Emerald as your tipple of choice.

    About the Winery: Paserene is a boutique winery in Franschhoek, owned by Martin Smith and Ndabe Mareda, that produces high-end, luxury wines. With a strong emphasis on “sense of place and people”, we take great care to ensure all the wines we produce, the artwork on the labels, and the tasting experience is truly authentic and guarantee a lasting legacy. The name Paserene comes from the Latin word Passeriformes, the order of “travelling and free” birds containing swifts and swallows.
